I wanted to do something different with the eggplant I got in my CSA box. I found this recipe and thought I would put my spin on it.
I really loved the lightly fried eggplant. I think this has become my favorite way to eat eggplant. Soooo good!

This is a very loose adaption of a recipe I found here.
I had gotten some amazing potatoes, carrots and beets in my CSA box this week. I liked the thought of a garlic-thyme dressing to go with. The dressing was outstanding. Not too lemony…not too garlic-y. Definitely a keeper.

Onion Tart

There was some amazing swiss chard in my CSA box last week. I wanted to keep it simple and play around with flavors. I used some walnut oil, honey, garlic and fresh ginger and was it ever fantastic.
