Lazy-a$$ Shrimp Tacos

Pardon my French. After a LONG Monday I really wasn’t in the mood to cook.  I threw this together in 15 minutes.  I had everything in the pantry and refrigerator. 

It’s hard to put this in a recipe form. All you really need is a pound of shrimp, olive oil and taco seasoning.  Pair it with a tortilla of your choice and whatever toppings are your favorite.  It’s all preference. But I will break down what I did.

  • Take a pound of uncooked, peeled & deveined shrimp and toss with enough to olive oil to barely cover the shrimp. Mix in about 2 heaping tablespoon of taco seasoning. 
  • Add coated shrimp to a heated frying pan and cook until done.  Place cooked shrimp onto a plate with some paper towel to get any excess oil off of the shrimp.
  • Brush a scant amount of olive oil in a clean frying pan and heat a corn (my favorite) or flour tortilla on both sides.  Set aside.

As for toppings, anything goes. I used a little coleslaw mix, fresh pico and some spicy mayo (low-fat mayonnaise, lime juice, hot sauce, splash of worctershire, garlic powder and S&P).
