Strawberry “Salsa”

I’ve been on a massive fruit kick lately. Tonight I had a craving. This recipe is my attempt at recreating the fantastic strawberry salsa the culinary students made for a wellness event held on the campus I work at.  This is fresh and bright and a perfect balance of tangy and sweet.  Did I mention it’s incredibly easy to put together?  The hardest part is cutting up the fruit. 

Serve it up in a cute little bowl with a few cinnamon pita chips…

That’s more like it!

Supplies:

  • 1 lb strawberries – diced
  • 1 mango – diced
  • 2 kiwi – peeked and diced
  • Zest of 1 lime
  • Juice of 1 lime
  • 2 tablespoons honey

Put diced fruit into a medium sized bowl. Toss together. In a small bowl mix the zest and juice of a lime and the honey together. Pour over fruit and toss lightly coating all of the fruit.  That’s it.

Try not to eat all of it in one sitting.  No judgement here if you do 😄
